The Vanilla Lover's Rich Chocolate Brownies with Nutella & Peanut Butter Swirl Frosting

I understand there are a lot of brownie recipes out there. You have probably already decided whether you are a fudge-like or a cake-like brownie person and chosen your favorite recipe accordingly. Well, I'm going to introduce you to yet another one. This brownie has a chewy outside and a rich, gooey inside. The addition of an unusual ingredient makes the inside lighter than your typical fudgey brownie and adds a delicious vanilla flavor to the rich chocolate. Personally, I love vanilla. You will probably start to notice I usually add a healthy dose of vanilla extract to most of my recipes.

The nutella and peanut butter frosting is the frosting on the cake...er...brownie. They are both light and fluffy and combine to make a peanut butter, chocolate and hazelnut dream. You should know that I stopped in the middle of photographing these and ate one.


The Vanilla Lover's Rich Chocolate Brownies with Nutella & Peanut Butter Swirl Frosting
Makes 8x8 pan

Brownies
Ingredients
4 oz semi-sweet chocolate, roughly chopped
6 tablespoons unsalted butter, cut into tablespoon cubes
3/4 cup granulated sugar
1/4 cup french vanilla powdered coffee creamer*
2 eggs, lightly beaten
1/2 cup all purpose flour
1 tsp vanilla extract
1/4 tsp salt

Nutella Frosting
Ingredients

1/2 cup nutella (or chocolate hazelnut spread)
1/4 cup softened unsalted butter
1/2 cup confectioners sugar, sifted
2 tablespoons heavy cream

Peanut Butter Frosting
Ingredients

3/4 cup creamy peanut butter
1/4 cup softened unsalted butter
1/2 cup confectioners sugar
1 tablespoon heavy cream
2 teaspoons vanilla extract
1/4 teaspoon salt

Preheat the oven to 325 degrees and line a 8x8 pan with foil and spray well with non-stick cooking spray. Melt the butter and chocolate in a saucepan over very low heat, stirring constantly. When the mixture is smooth and melted, remove from the heat and immediately pour into a large bowl. Let the mixture cool to room temperature. Once cool, add the rest of the ingredients and stir until combined. Spread into your prepared pan and bake for 45min.

While the brownies bake, prepare your frostings. To make the nutella frosting, add the butter and nutella to a large bowl attached to a stand mixer. Beat on medium speed for 2-3 minutes until combined and fluffy. Add half the sugar and beat on low speed until incorporated. Add 1 tablespoon of the cream. Beat on medium speed for about a minute. Turn the mixer back down to low and add the remaining sugar, beating on low until combined. Lastly, add the cream and beat on medium for another 1-2 minutes. Set the nutella frosting aside and make the peanut butter frosting. Add the peanut butter, vanilla, salt and butter to a large bowl attached to a stand mixer. Beat on medium speed for 2-3 minutes until combined and fluffy. Repeat the process you used for the nutella frosting, adding half the sugar on low speed, switch to medium, add all the cream then end with the second half of the sugar and beat for 1-2 minutes on medium.

Place the brownies on a cooling rack and cool completely before frosting and cutting. Put the frostings in two pastry bags fitted with star tips. Make lines of frosting, alternating between the two flavors.

* I originally made this recipe with Girl Scouts Caramel & Coconut powdered coffee creamer. It is amazing and gives the brownies a hint of caramel flavor. Unfortunately, they are discontinuing the flavor. If you can find it, definitely try substituting the French Vanilla for the Caramel & Coconut flavor!
